How to Make UBE (Purple Yam) Pie
Nothing beats making a Filipino treat called Ube Pie here in America
Ana: I remember my mom making this when we were young. She told me that the secret to a delicious "halaya" (purple yam jam) is the laborious process of cooking it by stirring continually until your arms ache and the consistency thickens. I totally agree with her! But I also believe that the main component is the love we put into it. Mushy! lol
When I came to America, I have been craving for my favorite Ube Halaya from Good Shepherd in Baguio City which is in the Northern part of the Philippines. My sister back home asked me if there's anything I wanted or have been longing for that she could send me and initially, that was my answer: Good Shepherd Ube Halaya.
But because it easily spoils and not readily accessible, I begged off on taking her generous offer. I know there's no way I'd be able to get hold of it. 😞
Out of desperation, I searched Youtube and wella, I came out with my own version.
The Recipe:
Ube or Purple yam (we bought frozen from an Asian store)
1 can coconut milk
1 can condensed milk (we just used 1/2 c)
Butter (depending on your prefence, we just used 1/2 c)
Some people put cheese but we skipped it
Place everything in a pan and stir continously until it thicken and your arms and hands get numb. lol
For the crust:
We used a preformed dough fro the grocery store. Just follow the baking instructions.
Pre-heat oven to 450F (230C) and bake for 10-15 minutes.
Pour the ube on the crust and let cool.
And it's done.
Serve with whipped cream.
